Whisky Christmas Fruit Cake

Serves: 6-8, Preparation:15 min, Cooking: 40min

Dry Fruit Marinade
  • 400gm            raisin / currant8
  • 350gm            sultanas
  • 50gm              glace cherries
  • 100gm            mix candice peel
  • Half cup          single malt whisky
  • Half cup          red wine

Butter base:
  • 225gm            unsalted butter(room temperature but no melted)
  • 225gm            fine brown sugar / fine sugar
  • 4nos               fresh egg

Flour base:
  • 225gm            plain flour
  • Half tsp           salt
  • Quarter tsp     McCormick freshly grated nutmeg

Dry base:
  • 50gm              rough chopped toasted walnut

1. Combine all the marinated dry fruit ingredient together well, do keep the marinated fruit in the fridge for three weeks.

2. Place the butter and sugar into a mixer, beat it to pale and flurry.

3. Sieve the flour, then fold in to the butter mixture.

4. Add in the dry base ingredients to the butter and flour mixture and gently fold in the ingredients well.
